These pancakes are my secret weapon for getting greens into my girls without a single complaint. The banana flavor takes over and the spinach practically disappears. They think they're eating something fun. I know they're eating something real.

  1. Add the banana, eggs, spinach, oats, cottage cheese (if using), baking powder, cinnamon, and salt to a blender.
  2. Blend until completely smooth and homogeneous.
  3. Let the batter rest for 2 to 3 minutes.
  4. Heat a nonstick skillet over medium-low and grease lightly.
  5. Pour small portions of batter to form pancakes.
  6. Cook for 2 to 3 minutes until bubbles appear on the surface.
  7. Flip carefully and cook 1 to 2 minutes more.
  8. Serve warm.

Vivi's Notes

Perfect for kids because the banana flavor dominates and the spinach goes completely unnoticed. You can make these ahead and store in the fridge for quick breakfasts throughout the week. Topping ideas: Greek yogurt, fresh blueberries, almond or peanut butter, a touch of honey, chia seeds.
