These waffles are where my Colombian roots meet Saturday mornings in Miami. Ripe plantain, melted mozzarella, a hint of cinnamon. No flour, no gluten, just real ingredients and the kind of breakfast that makes the whole house smell like home.

  1. Peel plantains and cut into chunks.
  2. Blend plantains, eggs, vanilla, cinnamon, and salt until smooth.
  3. Fold in mozzarella by hand.
  4. Preheat and grease waffle iron.
  5. Pour batter and cook 6 to 8 minutes until golden.
  6. Repeat with remaining batter.
  7. Serve warm with fresh fruit, honey, or yogurt.

Vivi's Notes

Riper plantain = sweeter and easier to blend. Look for yellow with black spots. Mozzarella gives that stretchy, savory contrast. Grain-free and naturally gluten-free. My girls ask for these every Saturday.
