Date, Oat & Almond Energy Bites

These little bites are what I reach for when I need something sweet but real. Naturally sweet from the dates, full of fiber and healthy fats, and perfect for those moments when you need something fast and delicious. My girls think they're candy.

  1. If the dates are a little dry, soak them in hot water for 10 minutes. Drain well.
  2. Add the nuts to a food processor and pulse a few times until you get small pieces.
  3. Add the dates and process until a sticky mixture forms.
  4. Add the oats and almond butter.
  5. Process again until everything is well combined and the mixture holds together when pressed with your fingers.
  6. If the mixture is too dry, add 1 tablespoon of water and process again.
  7. Roll into balls using about 1 tablespoon of mixture for each one.
  8. Place in a container and refrigerate for 20 to 30 minutes before serving.

Vivi's Notes

For a smoother, truffle-like texture, process for 1 to 2 additional minutes. How to store: in the fridge for up to 1 week, in the freezer for up to 3 months. You can add cacao powder, shredded coconut, or chia seeds for variation.
