Banana Bread Baked Oatmeal

An easy, nutritious breakfast perfect for using up those ripe bananas. You make it once and have breakfasts ready for several days. This is meal prep that actually tastes like a treat.

  • banana slices
  • chopped walnuts or pecans
  • blueberries
  • dark chocolate chips

Instructions

  1. Preheat oven to 350F (175C).
  2. Lightly grease a 9x13 inch baking dish.
  3. In the dish, mash the 4 bananas with a fork.
  4. Add oats, chia seeds, cinnamon, baking powder, and salt. Mix well.
  5. In a separate bowl, whisk eggs, Greek yogurt, milk, and vanilla until smooth.
  6. Pour wet mixture over oats and bananas. Mix until well combined.
  7. Add toppings (banana slices, nuts).
  8. Bake 35 to 45 minutes until center is firm and top is golden.
  9. Let rest 15 minutes before slicing.
