Crispy Air Fryer Chicken Drumsticks with Herb Sauce and Sweet Potato Puree

This is a full dinner in one recipe. Crispy drumsticks from the air fryer, a creamy herb sauce made with cottage cheese, and a silky sweet potato puree. My family thinks this is restaurant food. It takes 35 minutes.

For the drumsticks
8 chicken drumsticks
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon baking powder
For the herb sauce
1 cup cottage cheese
1/4 cup fresh cilantro
8 to 10 fresh basil leaves
1 green onion
juice of 1/2 lemon
1 tablespoon olive oil
1/2 teaspoon salt
2 to 4 tablespoons water
For the sweet potato puree
2 large sweet potatoes peeled and cubed
2 tablespoons butter
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder (optional)
Instructions
Pat drumsticks dry. Score 2 to 3 diagonal cuts on each.
Mix all spices and baking powder. Coat drumsticks with oil then spice mix.
Air fry at 350F for 15 minutes.
Increase to 400F, cook 15 to 20 more minutes, flipping halfway. Internal temp 175 to 185F.
Boil sweet potatoes 15 to 20 minutes until very soft.
Mash with butter, milk, salt, pepper, garlic powder.
Blend cottage cheese, cilantro, basil, green onion, lemon, oil, salt, water until smooth.
Serve puree with drumsticks and herb sauce. Garnish with fresh cilantro.
