This is one of those meals that looks fancy but is actually just smart cooking. The air fryer does most of the work. The sweet potato becomes the bowl, the turkey filling is packed with vegetables and protein, and the melted mozzarella on top makes everyone come running to the kitchen.

For the sweet potatoes
4 medium sweet potatoes
1 tablespoon olive oil
For the turkey filling
1 lb ground turkey (450g)
1 tablespoon olive oil
1/2 medium onion, diced
2 garlic cloves, finely minced
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon black pepper
1 cup fresh spinach, chopped
1/2 cup cottage cheese
To finish
1/2 cup shredded mozzarella
Chopped chives (optional)
Instructions
Wash and dry the sweet potatoes well.
Poke several holes with a fork around each one.
Place in the air fryer.
Cook at 390F (200C) for 35 to 45 minutes, flipping halfway.
They are ready when soft inside when poked with a knife.
Season the ground turkey with paprika, cumin, oregano, salt, and pepper.
Heat olive oil in a large skillet over medium heat.
Add the seasoned turkey and cook until well browned, breaking it up with a spoon.
Add the onion and cook 3 to 4 minutes until soft.
Add garlic and cook 30 seconds more.
Add spinach and cook until wilted.
Remove from heat and stir in cottage cheese until creamy and incorporated.
Remove sweet potatoes from air fryer.
Cut them in half lengthwise.
With a fork, lightly fluff the inside.
Fill each potato with the turkey mixture.
Top with shredded mozzarella.
Return stuffed potatoes to the air fryer.
Cook at 375F (190C) for 2 to 4 minutes until cheese melts and is lightly golden.
