This is my go-to weeknight dinner when I need something nourishing but don't want to spend an hour in the kitchen. The air fryer does the heavy lifting while I get the girls settled.

Sweet potatoes
2 medium sweet potatoes peeled and diced
1 tbsp avocado oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp sea salt
Salmon
1 1/2 lbs salmon fillet cut into cubes
1 tbsp avocado oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp sea salt
1/4 tsp black pepper
Bowls
4 cups baby spinach
1 avocado sliced
1 cup cucumber diced
1 cup cherry tomatoes halved
1/4 cup feta cheese crumbled
1 tbsp sesame seeds
Lemon dressing
2 tbsp olive oil
Juice of 1 lemon
1 tsp Dijon mustard
1/2 tsp honey
Pinch of sea salt
Instructions
Preheat air fryer to 400F.
Toss sweet potatoes with oil and spices.
Air fry 15 to 18 minutes, shaking halfway.
Toss salmon cubes with oil and seasonings.
Air fry salmon 7 to 9 minutes until golden.
Whisk dressing.
Divide spinach into bowls.
Top with sweet potatoes, salmon, avocado, cucumber, tomatoes, feta.
Drizzle dressing, add sesame seeds.

Add quinoa or brown rice for extra fiber. Leftovers keep well for meal prep up to 2 days. The lemon dressing ties everything together, make extra.
