This takes me straight back to Cartagena. My grandmother made platano en tentacion on Sundays, the whole house smelling of cinnamon and caramel. My version is lighter but carries the same warmth. Comfort food in its purest form.

  1. Peel plantains and cut into large chunks or lengthwise.
  2. Melt butter in wide skillet over medium-low heat.
  3. Brown plantains gently on both sides, 2 to 3 minutes.
  4. Add water, cinnamon, vanilla, and salt.
  5. Cover and cook 8 to 10 minutes, flip once, until very tender.
  6. Add honey during last 2 minutes for a light sauce.
  7. Finish with chopped pecans.

Vivi's Notes

Riper plantain = sweeter and more caramelized. This is pure Cartagena, my grandmother made this every Sunday. Serve with Greek yogurt, over cottage cheese, with granola, or alongside queso fresco for dulce-salado.
